Massive congratulations to third year student Abbie O’Keeffe on placing second in the All Island Healthy Home Chef competition. Abbie beat off stiff competition from 16 finalists after qualifying from over 600 entries. We are extremely proud of her achievement. Abbie prepared and cooked a Herb Crusted Fillet of Hake served with a black pudding potato cake, pea puree, asparagus wrapped in parma ham and a salsa verde. The competition was judged by renowned chef Nevin Maguire, Dr. Amanda McCloat and Dr. Helen Maguire. Many thanks to St. Angela’s College, Sligo for hosting the competition; the range of skill on display was phenomenal.
